Corey Milligan on the Timberline Outfitter, the Return of the MTN MAN Toy Shop, and Why New West KnifeWorks Is Going Back to Its Roots

There’s a moment when you step into New West KnifeWorks’ Jackson Town Square store where the story changes.

At first, it feels like a gallery: shimmering Damascus chef knives, sculptural hardwood handles, culinary tools displayed like fine art. But move deeper into the space and something shifts. The lighting softens. Buffalo fur and axes line the walls. Outdoor knives sit ready for hard use. The New West gallery ends and The MTN MAN Toy Shop begins.

“This is the Year of the MTN MAN for us,” says founder Corey Milligan. “People know us as a kitchen knife company—which we absolutely are—but Jackson Hole is where this whole thing was born. Hunting, fishing, skiing, cooking over fire, getting way out there… that’s always been part of our DNA.”

The relaunch of the MTN MAN Toy Shop marks a renewed focus on the outdoor side of New West KnifeWorks, with new knives, upgraded gear, expanded handle options, and a broader celebration of Western craftsmanship and adventure culture.

Leading the charge is the release of the new Timberline SureGrip Outfitter—a mountain-inspired evolution of one of the company’s most trusted field knives.

“The Outfitter Has Always Been a Jackson Hole Knife”

The Outfitter wasn’t designed in a conference room. It was shaped by hunters, guides, outfitters, and ranchers who needed a knife that worked in the realities of the backcountry.

“Elk blood, snow, mud, cold hands—that’s the environment this knife comes from,” Corey says. “The Outfitter has always been a Jackson Hole knife.”

Originally developed with local professional outfitters, the knife was built to hit a sweet spot: large enough to handle serious field work, compact enough to carry comfortably deep into the mountains.

“It needed to disappear on your belt until you needed it,” Corey explains. “Then when it was time to work, it had to feel absolutely dependable.”

That practical philosophy still defines the knife today, but the latest generation pushes performance further than ever before.

MagnaCut Changed Everything

The modern Outfitter now features MagnaCut steel, which has rapidly become the benchmark for high-performance outdoor knives.

“What’s incredible about MagnaCut is how it balances toughness, edge retention, and corrosion resistance at an extremely high level,” Corey says. “For an outdoor knife, that combination is kind of the holy grail.”

For hunters in the Mountain West, that matters.

Most knives begin to lose their edge after serious field dressing work. The Outfitter was specifically engineered to keep cutting long after lesser blades start to fade.

“You might be miles from camp, working in freezing weather, hands tired, trying to finish clean work before dark,” Corey says. “That’s not when you want to be fighting your knife.”

The Outfitter’s Spanish ricasso also makes field sharpening easier when the time finally comes.

“We think a lot about real-world use,” he says. “Not theoretical use. Actual use.”

The Timberline SureGrip: Inspired by First Light in the Mountains

While the steel brought major performance upgrades, the newest evolution of the Outfitter focuses on grip, ergonomics, and visual identity.

The new Timberline SureGrip variant introduces New West KnifeWorks’ G10 SureGrip handle construction, precision-machined fluting, and a striking orange G10 liner layered beneath the scales.

The design inspiration came directly from the mountains surrounding Jackson Hole.

“The idea was the timberline ridge at daybreak,” Corey says. “Dark evergreen forests with the warmth of sunrise just starting to break over the mountains.”

The result is subtle but deeply dimensional—a handle that shifts between earthy greens, shadow tones, and warm highlights depending on the light.

“It feels like something you’d carry in the Tetons,” Corey says.

Functionally, the handle is designed for demanding conditions. Alternating rubberized grip zones and G10 layers maintain traction even when wet, cold, or blood-slicked, while the added fluting improves both grip texture and visual character.

“You shouldn’t have to choose between a knife that performs and a knife that’s beautiful,” Corey says. “We want both.”

The Timberline now joins the permanent Outfitter lineup as the third core handle option, alongside other established colorways.

 

The Return of the MTN MAN Toy Shop

“This year is really about telling the fuller story of who we are,” Corey says. “We’ve spent years building some of the best kitchen knives in the world. But the same philosophy applies outdoors.”

That philosophy centers on craftsmanship, durability, performance, and experience.

Inside the MTN MAN Toy Shop, customers will find outdoor knives, axes, camp tools, Western gear, and objects designed to elevate life outside—from the practical to the playful.

“We call it the Toy Shop because adventure should be fun,” Corey says. “There’s seriousness to craftsmanship, but there should also be joy in the tools you carry.”

That spirit shows up throughout the space: throwing tomahawks, heirloom-quality outdoor blades, buffalo fur gear, custom accessories, and camp tools designed with equal attention to beauty and utility.

“You walk in and start imagining your next trip,” Corey says. “That’s really the point.”

Built in the Mountain West

Although New West KnifeWorks has become nationally recognized for culinary cutlery, the company’s outdoor gear remains deeply tied to the landscapes that inspired it.

Knives are precision-machined in Victor, Idaho, then hand-finished by artisans who shape, fit, polish, and sharpen every piece individually.

“The machine gives you precision,” Corey says. “The craftsman gives the knife soul.”

That combination of modern metallurgy and hands-on craftsmanship defines the New West approach.

“We’re not trying to build disposable gear,” he says. “We’re building tools that become part of people’s lives. The mountains shaped our perspective on what good tools should be. The Year of the MTN MAN is about celebrating that—and inviting people deeper into it.”
