Jack Rellstab Custom Knives

Some knife makers study steel. Jack Rellstab also studied the people who use it. Hand-forged in our custom shop from exquisite Damascus, this blade reflects a pursuit of craftsmanship and performance. To become a better knife maker, Jack attended the Culinary Institute of America, gaining firsthand insight into the demands of professional kitchens. The result is a knife where forge and function meet—built by a craftsman who understands both the blade and the hand that guides it.
